Ingredients
- Pork chops (1 per person)
- Salt and pepper
- 1 orange
- 1 lemon
- 3 cloves garlic
- 1 sprig rosemary
- 3 whole cloves
- ¼ cup (60ml) lemon olive oil
Method
-
Season the chops with a light sprinkling of salt and pepper.
-
In a bowl, combine the citrus zest, crushed garlic, chopped rosemary, whole cloves, and lemon olive oil.
-
Add the chops to the marinade, mixing thoroughly with your hands. Squeeze the juice from the orange over the mixture.
-
Cover the bowl and refrigerate overnight, the longer the chops marinate, the better the flavour.

Remove the chops and pat them dry.
-
Preheat a cast-iron grill pan with a little EVOO and cook each chop over medium heat for 4 minutes on each side.
-
Serve with roasted carrots.
