What is extra virgin and first cold press oil?
Cold pressing is the traditional method of producing olive oil where the oil is extracted without using any heat, which may extract more oil but it is of lower quality. Not the Nudo way. Extra virgin is when the olives go through this press within 24 hours of being picked, which maintains the lowest possible acidity (less than 0.8%). So extra virgin first cold press olive oil is the freshest, purest, and highest quality oil you can get. Va bene!
Corrado Corradini is an olive oil expert who mills all the oils for our shop, as well as the seasonal summer and autumn adoption oils. The olives come from all around Le Marche where he lives, from groves he’s worked with for years. His attention to detail combined with his passion for the Mediterranean culinary tradition have led him to very authentic olive oils, which is why we love him and his oils, and have been for over 10 years.
Fine olive oil that goes perfectly with delicate dishes do you can really taste it. Excellent for drizzling, dipping, but also great for roasting and cooking.
