Persephone's Iced Tea

This mojito-like cocktail was inspired by the Greek Goddess Persephone who was banished to the underworld for eating pomegranate seeds.  You can use any Darjeeling tea to make this but we think the fruity monsoon flush is a match made in heaven. Had Persephone been able to sip on this cocktail we're pretty sure she would have found it a heavenly respite from the underworld.

Ingredients

  • Vodka, 50ml/1.7 fl oz
  • Darjeeling Monsoon Flush tea, 50ml/1.7 fl oz chilled
  • Sugar syrup (2:1), 15ml/0.5 fl oz
  • Pomegranate molasses, 15ml/0.5 fl oz
  • Ginger beer
To garnish:
  • Crushed ice
  • Pomegranate seeds
  • Fresh mint leaves
Vodka, 50ml/1.7 fl oz Darjeeling Monsoon Flush tea, 50ml/1.7 fl oz chilled Sugar syrup (2:1), 15ml/0.5 fl oz Pomegranate molasses, 15ml/0.5 fl oz Ginger beer Crushed ice Pomegranate seeds Fresh mint leaves

Method

  1. Put 5 fresh mint leaves in a tall glass. Add a few heaped teaspoons of pomegranate seeds, and then half fill the glass with crushed ice. Stir to bruise the mint and mix up the garnish. Add 5 more mint leaves and more pomegranate, then fill the glass to near the top with ice. Stir again.
  2. Put the vodka, cold tea, sugar and pomegranate molasses in a cocktail shaker and shake until chilled. Strain the liquid carefully into the ice-filled glasses, giving it a gentle stir to ensure a good distribution of mint and pomegranate. Top up with ginger beer. Slap a mint sprig and add as a garnish. Delicious.
