Elderflower Iced Tea

The first flush has a more delicate flavour, colour and aroma. Perfect for pairing with gin, we thought.

 


Recipe

  • Serves 1

Ingredients

For the drink:

  • Cambridge dry gin, 50 ml/ 1.7 fl oz
  • First flush Darjeeling tea, 50 ml/  1.7 fl oz
  • Saint Germain elderflower liqueur, 25 ml/ 0.8 fl oz 
  • Lemon juice, 25 ml/ 0.8 fl oz
  • Sugar syrup (2:1 sugar to water) to taste (we like it sharp and used 15 ml)
  • Tonic water to top up 

To garnish:

  • Apple, sliced in rounds  (rub the apple with a little lemon juice to prevent browning)
  • Lemon, sliced in rounds
  • Cucumber, sliced in rounds wheels

Method

  1. Brew the tea, 1 tsp per person, for 3 minutes using water at roughly 80 C/. Then leave the tea to cool completely.
  2. Combine all the ingredients in a Boston glass and shake with ice.
  3. Strain into a glass filed with crushed ice.
  4. Top with tonic water, garnish and drink!
