Fresh Tapenade

Ingredients

  • 250 g black olives
  • I clove of garlic
  • 6 salted anchovy fillets
  • 3 tablespoons of chopped capers
  • Small bunch of parsley
  • 4 tablespoons of Nudo Extra Virgin Olive Oil
  • Sea Salt and freshly ground black pepper

Method

To make this tapenade start by preparing all the ingredients:

Pit the olives and set aside.

Peel the garlic clove and cut it into 4 pieces.

Remove any bones from the anchovies, rinse and cut into pieces.

Roughly chop the parsley.

Now, place all the ingredients into a blender, and blend while gradually adding the extra virgin olive oil until it is a smooth creamy consistency.

Serve on fresh toasted bread, or as a dip with taralli.
