Spicy BBQ Sweetcorn
Grilled sweetcorn is a must for a summer barbecue. Try this easy recipe drizzled with our chilli flavoured oil for a hot smokey finish.
Recipe
- Serves 4 as a side
- Preparation time: 5 minutes
- Cooking time: 15 minutes
Ingredients
- Sweetcorn ears, 4 husk removed
- Sweet chilli jam
- Sour Cream
- Coriander, chopped for garnishing
- Lime juice, to taste
- Salt
- Extra virgin olive oil, 2 tbsp
- Peperoncino chill olive oil, to drizzle
Method
- Light the BBQ and then bring a large pan of salted water to the boil.
- Add the sweetcorn and boil for 10 minutes or until soft.
- Transfer the corn to the BBQ and drizzle with a small amount of olive oil
- Cook for around 5 minutes or until slightly charred for a smoky taste.
- Remove from the heat and dollop sweet chilli jam and sour cream over to taste.
- Squeeze some lime juice over the corn and finally sprinkle some chopped coriander on top and drizzle with chilli oil for an extra hit.
