Elderflower Iced Tea
The first flush has a more delicate flavour, colour and aroma. Perfect for pairing with gin, we thought.

Ingredients
For the drink:
- Cambridge dry gin, 50 ml/ 1.7 fl oz
- First flush Darjeeling tea, 50 ml/ 1.7 fl oz
- Saint Germain elderflower liqueur, 25 ml/ 0.8 fl oz
- Lemon juice, 25 ml/ 0.8 fl oz
- Sugar syrup (2:1 sugar to water) to taste (we like it sharp and used 15 ml)
- Tonic water to top up
To garnish:
- Apple, sliced in rounds (rub the apple with a little lemon juice to prevent browning)
- Lemon, sliced in rounds
- Cucumber, sliced in rounds wheels
Method
- Brew the tea, 1 tsp per person, for 3 minutes using water at roughly 80 C/. Then leave the tea to cool completely.
- Combine all the ingredients in a Boston glass and shake with ice.
- Strain into a glass filed with crushed ice.
- Top with tonic water, garnish and drink!
