This oil is UNFILTERED. Olive oil destined for market shelves is usually filtered to prolong its shelf-life. But this also mean s the oil is exposed to air, which in turn oxidizes the oil and destroys some of the anti-oxidants. So UNFILTERED means lots more health giving anti-oxidants.
